I was reading my friend’s blog and came across this recipe and knew I had to try it.

With all my allergies if I find something that is “clean” for me to eat and it looks this good 🙂 I am anxious to make it my own.

My children are good sports and they let me know if something is a success or failure.

This one was gobbled up and seconds and even thirds were served!!

I changed the recipe just a bit.

2 cups of quinoa

1-2 chopped red pepper

1/2 diced red onion

Roasted butternut squash.  I had 1/2 of a squash for each serving and used it as a bowl.

   1 cup chopped parsley

Olive  Oil

Sea Salt

Balsamic Vinegar

Bragg Liquid Amino

I make the quinoa and then set aside. I then mix all the remaining ingredients and mix with olive oil, sea salt and balsamic vinegar to taste.

I also love to add Bragg’s Amino Acid to mine.  I love the flavor.
