I leave it to my husband to grill and I add a salad to it.
I don't know what it is….but as soon as fall arrives I am wanting to bake and cook more.
I want to nest and fluff the whole house.
I am wanting to paint right now and create.
So..I am getting off track.
I tried a new recipe last night and loved it so much I wanted to share it with you!
In fact, during the meal I got up from the table to put a plate together for YOU so I could take a photo of it.
Please tell me you other bloggers do things like that?
Why husband just asked, "Who is that for"?
So if you don't know what to make for dinner tonight… give this a try.
EVERYONE loved it….that is saying something.
Chicken With Grilled Peaches and Arugula
Serves 4 (we had plenty left over and we are a family of five)
4 6-ounces boneless, skinless chicken breasts (I grilled five so we would have leftovers)
2 tablespoons plus 1 teaspoon olive oil
kosher salt and black pepper
2 medium red onions, sliced into 1/2 inch think rounds
3 peaches, cut into wedges
1 bunch arugula, thick stems removed (about four cups) I just used the red leaf lettuce I had on hand.
2 tablespoons balsamic vinegar
2 ounces blue cheese, broken into pieces (I used more than that because we LOVE blue cheese and the kids love saying that they are eating mold:))
*Heat grill to medium-high. Brush chicken with 1 teaspoon of the oil and season with 1/2 teaspoon each salt and pepper. In a bowl, toss the onions, peaches, 1 tablespoon of the oil, and 1/4 teaspoon each salt and pepper.
*Grill the chicken and onions until the chicken is cooked through and the onions are tender, 5-6 minutes per side. Grill the peaches until charred, 2 minutes per side.
* Toss the arugula with the onions, peaches, vinegar, and remaining oil. Top with the cheese and serve with chicken.
I thought I might get a little respect in your eyes…NO?
What are YOU having for dinner?

Oh I have soooo done that before.
Now my family just says, “Blogger!” when they see me get up and make a pretty plate of food.
mmm mmm mmm that sounds SO good!!! i don’t think either of my boys would eat blue cheese though…i have been getting some good recipes from foodnetwork.com lately…
Oh yummy! I’m always looking for new chicken recipes…and peaches are one of my favorite fruits:)
This looks so yummy! I had to laugh because I do the same thing. I make my hubby wait before taking his first bite so I can take a quick picture. He just loves that, let me tell ya! Anyway, I have a little carrot recipe that I am thinking of sharing soon. Tonight…shrimp stuffed chicken and veggies.
Ha…we just ordered from Stir Crazy! I too have been getting off track lately and not cooking as much as I would like (and I really do like to cook). Maybe I can redeem myself with this one! I still have your bread recipe hanging on the front of my fridge, just waiting to be tried…I’m definitely behind!
🙂 T
Wish you were the cook at our house:) Looks and sounds yummy…..
Any chicken recipe is good in my book and this one looks yummy. We did breakfast for supper tonight so I made choc chip pancakes and sausage. I love breakfast, so it is always a treat and we do it every once in awhile for a change of pace. We tend to fall into food ruts ~ I am like you though wanting to cook and bake and nest as the weather gets cooler.
If you would keep my plate warm I will be right over. Awesome recipe, thanks so much for sharing it.
Looks delicious. We grill all the time at my house. Will have to give this one a try! Smiles, H
PS. Your family photos are amazing!
oh my friend – this not only sounds delish – but it sounds like we are exactly the same, too: cooking in the summer = husband at the grill. And now that it is fall…i’m SO motivated and excited to try new recipes!
Saw it was snowing today – i can imagine the exciting smells coming from your kitchen….mixed with a little paint-fumes, too! Wait, was that a rogue thread in my dish? NO – doesn’t gross me out – I just love that you’re so creative in every aspect!
Hugs – Tracy.
PS – keep the recipes coming – I’m printing them and adding them to my rotations! xo
That looks soooooo yummy! Very proffesional! I love to try new dishes, so I’m gonna be making that one!

I’ll have the carmel corn ready that I make by hand…….I don’t do kettle corn…….
