I do not feel like cooking in the summer.

I leave it to my husband to grill and I add a salad to it.

I don't know what it is….but as soon as fall arrives I am wanting to bake and cook more.

I want to nest and fluff the whole house.

I am wanting to paint right now and create.

So..I am getting off track.

I tried a new recipe last night and loved it so much I wanted to share it with you!

In fact, during the meal I got up from the table to put a plate together for YOU so I could take a photo of it.

Left. The. Table.

Please tell me you other bloggers do things like that?

So if you don't know what to make for dinner tonight… give this a try.

EVERYONE loved it….that is saying something.

Chicken With Grilled Peaches and Arugula

Serves 4 (we had plenty left over and we are a family of five)

4 6-ounces boneless, skinless chicken breasts (I grilled five so we would have leftovers)

2 tablespoons plus 1 teaspoon olive oil

kosher salt and black pepper

2 medium red onions, sliced into 1/2 inch think rounds

3 peaches, cut into wedges

1 bunch arugula, thick stems removed (about four cups) I just used the red leaf lettuce I had on hand.

2 tablespoons balsamic vinegar

2 ounces blue cheese, broken into pieces (I used more than that because we LOVE blue cheese and the kids love saying that they are eating mold:))

*Heat grill to medium-high.  Brush chicken with 1 teaspoon of the oil and season with 1/2 teaspoon each salt and pepper.  In a bowl, toss the onions, peaches, 1 tablespoon of the oil, and 1/4 teaspoon each salt and pepper.

*Grill the chicken and onions until the chicken is cooked through and the onions are tender, 5-6 minutes per side. Grill the peaches until charred, 2 minutes per side.

* Toss the arugula with the onions, peaches, vinegar, and remaining oil.  Top with the cheese and serve with chicken.

I would also like to add that I did all the grilling and I don't ever grill anything. 

I thought I might get a little respect in your eyes…NO?
